Ingredients
  

  • 400 g spaghetti
  • 6 cloves garlic, thinly sliced
  • 80 ml extra-virgin olive oil
  • 1-2 dried red chilies, crumbled (or 1 tsp red pepper flakes)
  • A small handful of fresh parsley, chopped
  • Salt for the pasta water

Method
 

  1. Bring a big pot of well-salted water to a boil. Drop in the spaghetti.
  2. While pasta cooks: slice the garlic THIN — uniform slices brown evenly. Heat the olive oil in a wide skillet over LOW heat. Add the garlic.
  3. Patience now. Cook the garlic 5-6 minutes over low heat, swirling occasionally. You want pale gold, not brown — brown garlic is bitter and ruins the dish.
  4. When the garlic is golden, add the chili. Stir 30 seconds.
  5. About 1 minute before the pasta is done, scoop out a cup of pasta water. Drain the pasta (still slightly underdone).
  6. Add the pasta directly to the skillet. Toss vigorously over medium heat, adding splashes of pasta water until you have a glossy emulsion clinging to every strand. This is “mantecatura” — about 1 minute of steady tossing.
  7. Off heat, scatter parsley and toss once more. Serve immediately. No cheese.

Notes

Don’t use jarred minced garlic. Don’t crush the garlic — slice it. Sliced garlic melts into the oil and gives a nuttier flavor than crushed. Keep the heat LOW — this dish is ruined the moment the garlic goes brown.
