Ingredients
  

  • 8 thick slices stale rustic bread (a few days old is perfect)
  • 4 ripe tomatoes, chopped (or 1 cup good canned)
  • 4 tbsp extra-virgin olive oil + more for drizzling
  • 1 tsp dried oregano
  • 0.5 tsp salt (or to taste)
  • 2 cloves garlic, smashed
  • 4 cups warm water
  • 1 small bunch fresh basil (optional)
  • 1 dried red chili, crumbled (optional)

Method
 

  1. Place the smashed garlic in a heat-proof bowl with the warm water. Let infuse 5 minutes; remove the garlic.
  2. Salt the water generously.
  3. Tear the stale bread into chunks and divide among 4 deep bowls.
  4. Top each with chopped tomatoes, oregano, and basil if using.
  5. Pour the warm garlic-water over each bowl — the bread should soften but not turn to mush. Wait 1-2 minutes.
  6. Drizzle each bowl generously with olive oil. Add chili if using.
  7. Eat with a spoon — bread, tomato, and broth in each bite.

Notes

The bread MATTERS — Pugliese rustic bread (pane di Altamura) is ideal, but any sturdy crusty country loaf works. Don’t use sandwich bread, ever. Water should be warm-to-hot (not boiling) — the dish should still feel summery.
